You can change the monitoring schedule for monitored objects, such as: the Screen, Websites, Email, etc. for a monitoring profile from the Monitoring Settings screen.
The example below shows how you can change the monitoring schedule for the Applications object for the Default settings profile:

Monitoring Schedule prevents the Agent from tracking the adjusted monitoring features outside of the defined schedule. However, this doesn't impact worked time. Worked time will still be tracked outside of the scheduled hours if the desktop isn't locked (unless you enable the RECORD LOCKED SESSION option on the Screen monitoring settings).
